EXPANDED RICE

 

Expanded rice is prepared by using round rice which is cooked with the addition of sugar, then subjected to hot air while passing through rollers causing the hot air to displace the residual water so quickly as to inflate the grain; it is then subjected to a toasting procedure such as to maintain the "expanded grain") appearance. Used for breakfast cereals and in confections.
