If you want to eat wali wa nazi, a delicious coconut rice, you must reach Kenya........ but if you want prepare it on your own, this is the recipe.
WALI WA NAZI
( coconut rice )
¼ raw rice, grated white pulp of 1 big or 2 small coconuts, water, a pinch of salt.
Put grated coconut in hot water and squeeze a part of it, in order to obtain a cremy milk.
Put this blend apart. Add more water and squid again, in order to obtain less creamy milk.
Wash rice , three times, with cold water. Put coconut milk, with some salt, in a saucepan and let it nearly reach the boiling point.
Add washed rice and stir, carefully. Keep on stirring, in order to avoid it burning.
Add cremy milk and keep on stirring. Flame must be low.
Cover rice with blotting paper, cover and put a weight on it, so that it is sealed, steam for about 25 minutes, on a very low flame, until it is ready to be served.
Coconut rice can be served with some chicken, or with some fish, or plain with vegetables and curry.
