WHITE RICE


Having a low content of lipids, protein and fibre it is an easily digestible food, suitable not only for daily nourishment but also for a convalescents diet, supplying energy without creating intolerance or inflammation. And as such it is suitable for gastro-enteric disturbances when it is indispensable not to irritate the intestinial or stomach mucous membranes.
Also the sodium-potassium balance is good but care should be taken not to undo the beneficial effects of the potassium by adding too much salt during cooking.
It is an extremely versatile food in the kitchen, and can be used to form excellent single dishes, light and nutritious (as long as excessive amounts of fats are not added it is preferable to use Extra Virgin olive oil and aromatic herbs to give flavour).
And it should not be forgotten that it is a food that has lost a large amount of its vitamin and mineral content during milling. Those that remain must be safeguarded: no washing; no wasteful litres of water to cook a fist?full of rice, better the total absorption of the water or cooking broth. Like this it will be a healthier and tastier food.
